Basil Pesto ~

3 cups basil leaves only, washed and dried

3 medium cloves of garlic

½ cup of raw pine nuts or walnuts

Juice of ½ lemon

3/4 cup Parmesan, loosely packed and FRESHLY GRATED

½ cup extra-virgin olive oil

Salt & Pepper

Into the bowl of a food processor, add the garlic, basil leaves, pine nuts, lemon juice, salt, and pepper. With the blender still running, slowly pour 1/2 cup of olive oil. Pulse until coarsley chopped.Check for a thick, yet smooth consistency, adding more oil if necessary. Transfer to a bowl and stir in 3/4 cup Parmesan.
